Ingredients
- Stew beef1.5 lbs
- Olive oil1 tbsp
- Onion1 medium
- Garlic powder1 tsp
- Beef broth3 cups
- Tomato paste2 tbsp
- Potatoes1.5 lbs
- Carrots2 medium
- Cumin0.5 tsp
- Saltto taste

Cut stew beef into bite-sized pieces. Season with salt, black pepper, and garlic powder.

Heat olive oil in a large pot over medium-high heat. Brown the beef pieces on all sides. Remove beef and set aside.

Add chopped onion to the pot and cook until softened, about 4 minutes.

Stir in tomato paste and cumin. Cook for 1 minute.

Return beef to the pot. Add beef broth. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.

Add peeled and cubed potatoes and carrots. Add water if needed to ensure vegetables are mostly submerged. Cover and simmer for another 20-25 minutes, or until vegetables and beef are tender.
