  • Kidney beans, drained and rinsed1 can (15 oz)
  • Black beans, drained and rinsed1 can (15 oz)
  • Corn, drained1 can (15 oz)
  • Chicken broth4 cups
  • Taco seasoning mix1 packet (1 oz)
  • Chili powder1 tsp
  • Cumin1 tsp
  • Saltto taste
  • Black pepperto taste
  • Optional garnishes: shredded cheddar cheese, sour cream, chopped cilantro, crushed tortilla chipsas desired

Steps

    In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.

    Add the chopped onion and cook until softened, about 5 minutes.

    Stir in the minced garlic and cook for 1 minute more until fragrant.

    Add the diced tomatoes (undrained), kidney beans, black beans, corn, chicken broth, taco seasoning, chili powder, and cumin. Stir to combine.

    Bring the soup to a boil, then reduce heat and simmer for at least 20-30 minutes, allowing the flavors to meld. Stir occasionally.
