Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Zest half of the lemon and set aside. Cut the remaining lemon into slices.

Place salmon fillets, skin-side down (if applicable), in the hot skillet. Sear for 4-5 minutes until the skin is crispy.
