Pat salmon fillets dry with paper towels. Season generously with salt and pepper.

Heat olive oil in a large cast-iron skillet or frying pan over medium-high heat until shimmering.

Place salmon fillets, skin-side down (if applicable), in the hot skillet. Sear for 4-5 minutes until the skin is crispy and golden brown.

Flip the salmon and cook for another 2-4 minutes, depending on thickness, until cooked through but still moist. Remove salmon from the skillet and set aside.

Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and cook for 30 seconds until fragrant.

Pour in lemon juice and scrape up any browned bits from the bottom of the pan. Stir in chopped dill and heavy cream. Simmer for 1-2 minutes until the sauce slightly thickens.
