- Olive Oil6 tbsp
- Bell Peppers2 (mixed colors), sliced
- Zucchini1 large, sliced
- Cherry Tomatoes1 cup
- Red Onion1/2, sliced
- Garlic3 cloves, sliced
- Dried Oregano1 tsp
- Fresh Parsley2 tbsp, chopped
- Lemon1, for serving

Preheat grill to medium-high.

Clean and scale the fish. Make shallow slashes on both sides.

In a large bowl, toss the sliced bell peppers, zucchini, red onion, cherry tomatoes, and sliced garlic with 4 tbsp olive oil, oregano, salt, and pepper.

Brush the fish with the remaining 2 tbsp olive oil and season with salt and pepper.

Place the seasoned vegetables and fish on the grill. Grill the fish for 6-8 minutes per side. Grill the vegetables until tender and slightly charred, turning occasionally (approx. 10-15 minutes).

Arrange the grilled fish and vegetables on a platter. Garnish with fresh parsley and serve with lemon wedges.
