Clean and gut the mackerel. Make shallow cuts on both sides.

In a large bowl, toss the sliced bell peppers, zucchini, red onion, and cherry tomatoes with 4 tablespoons of olive oil, minced garlic, chopped oregano, thyme, salt, and pepper.

Season the mackerel with salt and pepper.

Preheat grill to medium-high heat. Oil the grates.

Grill the vegetables in a grill basket or directly on the grates for about 8-10 minutes, turning occasionally, until tender and slightly charred.
