Preheat oven to 200°C (400°F).

Clean and scale the scorpionfish. Make shallow cuts on both sides of the fish.

Stuff the cavity of the fish with sliced garlic and lemon. Place rosemary sprigs inside.

Rub the fish all over with olive oil, salt, and pepper.

Place the fish in a baking dish. Pour white wine around the fish.

Bake for 30-40 minutes, or until the fish is cooked through and the skin is crispy. Baste occasionally with pan juices.

Serve hot, garnished with fresh parsley and lemon wedges.
