Prepare the filling: In a bowl, combine farmer's cheese, egg yolk, chopped dill, chopped parsley, salt, and pepper. Mix well until smooth and creamy.

Make the dough: Combine flour, eggs, water, and salt in a large bowl. Mix until a cohesive dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic.

Assemble the dumplings: Roll out the dough thinly (about 1/8 inch thick). Cut out circles using a glass or cookie cutter. Place a teaspoon of cheese filling in the center of each circle. Fold the dough in half to create a crescent shape, pressing the edges firmly to seal.

Boil the dumplings: Bring a large pot of salted water to a rolling boil. Carefully add the dumplings in batches, ensuring not to overcrowd the pot. Cook for 4-6 minutes after they float to the surface, or until the dough is cooked through.

Serve: Remove dumplings with a slotted spoon. Serve hot, drizzled with melted butter and garnished with extra fresh herbs.
