- White wine200 ml
- Olive oil100 ml
- Fresh parsley1 bunch

Preheat your oven to 200°C (400°F).

Peel and cut the potatoes into wedges or cubes. Mince the garlic.

Clean the squid, cut into rings or pieces.

In a large bowl, toss the potatoes with half of the olive oil, minced garlic, salt, and pepper.

Spread the seasoned potatoes on a baking sheet or in a roasting pan.

Bake the potatoes for about 20-25 minutes until they start to soften.

While potatoes are baking, toss the squid with the remaining olive oil, salt, pepper, and chopped parsley.

Add the seasoned squid to the baking pan with the potatoes. Pour the white wine over everything.

Return the pan to the oven and bake for another 20-25 minutes, or until the squid is cooked through and tender, and the potatoes are golden brown and fully cooked. Do not overcook the squid.

Squeeze fresh lemon juice over the dish before serving. Garnish with extra fresh parsley.
