Soak and prepare the salted cod as per the traditional recipe. Flake it.

Boil and mash the potatoes.

Finely chop the sun-dried tomatoes, capers, parsley, and garlic.

In a bowl, combine the flaked cod, mashed potatoes, chopped sun-dried tomatoes, capers, parsley, garlic, eggs, and flour. Season with salt and pepper. Mix well.

Heat olive oil in a frying pan over medium-high heat.

Form irregular fritters and fry them in the hot oil for 3-5 minutes per side until golden and crisp. Drain on paper towels.

Serve hot, garnished with fresh basil and a drizzle of balsamic glaze.
