A rich and flavorful traditional stew made with dried salted cod, potatoes, onions, garlic, and a touch of tomato, simmered in a savory broth.

- White wine100ml
- Tomato paste1 tbsp
- Fish stock or water1 liter
- Bay leaf1
- Parsleyfor garnish

Soak the dried salted cod in cold water for at least 24-48 hours, changing the water several times. Drain and cut into bite-sized pieces.

Peel and dice the potatoes. Finely chop the onions and mince the garlic.

In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté until softened, about 5-7 minutes.

Add the minced garlic and cook for another minute until fragrant.

Stir in the tomato paste and cook for 1-2 minutes.

Pour in the white wine and let it simmer for a few minutes to reduce slightly.

Add the diced potatoes, cod pieces, bay leaf, and fish stock (or water). Bring to a boil.

Reduce the heat, cover, and simmer for about 30-40 minutes, or until the potatoes are tender and the cod is cooked through.

Season with salt and black pepper to taste. Remove the bay leaf.

Ladle the stew into bowls and garnish with fresh chopped parsley.
