- Smoked kielbasa sausage8 oz
- Red onion1/2 medium
- Red bell pepper1/2 medium
- Fresh parsley3 tablespoons, chopped
- Olive oil3 tablespoons
- Apple cider vinegar2 tablespoons
- Dijon mustard1 teaspoon
- Salt1/2 teaspoon
- Black pepper1/4 teaspoon

Drain and rinse the mixed beans. Place them in a large bowl.

Dice the smoked kielbasa sausage into bite-sized pieces. Sauté in a dry pan over medium heat until lightly browned. Let cool slightly.
