- Potatoes500 g
- Red Onion1 medium
- Garlic2 cloves
- Parsley1 bunch
- Extra Virgin Olive Oil100 ml
- Red Wine Vinegar3 tbsp
- Saltto taste
- Black Pepperto taste

Clean the octopus thoroughly. Place it in a pot with water, salt, and a few peppercorns. Bring to a boil, then reduce heat and simmer for 45-60 minutes, or until tender. Let it cool in its cooking liquid.

While the octopus is cooking, boil the potatoes in salted water until tender. Drain and let them cool slightly, then peel and cut into bite-sized cubes.

Once the octopus is cool enough to handle, remove it from the liquid, discard the beak and eyes, and cut the tentacles and body into bite-sized pieces.

Finely chop the garlic and parsley.

Thinly slice the red onion.

In a large bowl, combine the octopus pieces, cubed potatoes, and sliced red onion.

In a small bowl, whisk together olive oil, red wine vinegar, chopped garlic, salt, and pepper to make the dressing.

Pour the dressing over the octopus and potato mixture. Add the chopped parsley and gently toss to combine all ingredients.

Cover and refrigerate for at least 30 minutes to allow the flavors to meld before serving.
