A quintessential Italian dessert featuring layers of coffee-soaked ladyfingers and a rich mascarpone cream, dusted with cocoa powder.

- Mascarpone cheese500g
- Eggs (yolks)4 large
- Granulated sugar100g
- Ladyfingers (Savoiardi)200g
- Strong brewed coffee300ml
- Dark rum or Marsala wine2 tbsp
- Unsweetened cocoa powder2 tbsp
- Saltpinch

Whisk egg yolks and sugar in a heatproof bowl over a double boiler until pale and thickened. Remove from heat and let cool.

Gently fold the mascarpone cheese into the cooled yolk mixture until smooth.

Brew strong coffee and let it cool. Stir in rum or Marsala wine.

Quickly dip ladyfingers into the coffee mixture, one by one, and arrange them in a single layer in a serving dish.

Spread half of the mascarpone cream mixture over the ladyfingers.

Repeat with another layer of dipped ladyfingers and the remaining mascarpone cream.

Cover and refrigerate for at least 4 hours, or preferably overnight.

Just before serving, dust the top generously with unsweetened cocoa powder.
