- Salt cod (baccalà)400g
- Cooked mashed potatoes150g
- Sun-dried tomatoes in oil50g
- Capers2 tbsp
- Garlic1 clove
- Fresh oregano1 tbsp
- Eggs1
- Semolina flour40g
- Olive oilfor frying
- Saltto taste
- Black pepperto taste

Soak and prepare the salt cod as per traditional method, then flake it.

Drain and finely chop the sun-dried tomatoes. Rinse and chop the capers. Mince the garlic. Chop the fresh oregano.

In a bowl, combine the flaked cod, mashed potatoes, chopped sun-dried tomatoes, capers, minced garlic, chopped oregano, egg, and semolina flour. Season with salt and pepper. Mix well.

Form into small fritters.

Heat olive oil in a frying pan over medium-high heat.

Fry the fritters until golden brown and crispy. Drain on paper towels.

Serve warm, perhaps with a light aioli or a fresh tomato salad.
