- Red onion, cut into wedges1 large

- Olive oil5 tbsp
- Smoked paprika1 tsp
- Dried mixed herbs (e.g., savory, marjoram)1 tsp

Preheat oven to 200°C (400°F).

In a large bowl, combine chicken pieces, potato wedges, carrots, zucchini, red onion wedges, and smashed garlic cloves.

Add olive oil, smoked paprika, mixed herbs, salt, and pepper. Toss thoroughly to coat all ingredients.

Spread the mixture evenly in a large baking dish or on a baking sheet.

Roast for 60-70 minutes, stirring occasionally, until the chicken is cooked through, the potatoes are tender, and the vegetables are nicely roasted and slightly caramelized.
