- Coconut milk (thick)400 ml
- Coconut milk (thin)200 ml
- Shallots8
- Garlic cloves5
- Red chilies3-5
- Turmeric2 cm
- Ginger2 cm
- Galangal1 cm
- Candlenuts3
- Lemongrass1 stalk
- Kaffir lime leaves3
- Bay leaves2
- Coriander seeds1 tsp
- Cumin seeds1 tsp
- Saltto taste
- Water200 ml
- Vegetable oil2 tbsp

Prepare the young jackfruit: peel, remove the core, and cut into bite-sized pieces. Boil until tender, then drain.

Grind the spice paste: blend shallots, garlic, red chilies, turmeric, ginger, galangal, candlenuts, coriander seeds, and cumin seeds until smooth. Bruise the lemongrass stalk.

Heat oil in a pot or wok. Sauté the spice paste, bruised lemongrass, kaffir lime leaves, and bay leaves until fragrant.

Add the boiled young jackfruit to the pot and stir well to coat with the spice mixture.

Pour in the thin coconut milk and water. Bring to a simmer and cook for about 20 minutes, stirring occasionally.

Add the thick coconut milk and salt. Continue to simmer gently until the jackfruit is very tender and the sauce has thickened to your desired consistency. Do not boil vigorously after adding thick coconut milk.
