Bahan
- Catfish (Ikan Patin)500g, cut into chunks
- Tempoyak (fermented durian paste)100g
- Coconut milk (canned)400ml
- Shallots3, finely chopped
- Garlic2 cloves, minced
- Curry powder (Malay style)2 tbsp
- Turmeric powder1 tsp
- Chili paste (sambal tumis)1 tbsp, or to taste
- Lemongrass1 stalk, lightly bruised
- Saltto taste
- Water150ml
- Vegetable oil1 tbsp

Heat vegetable oil in a pot over medium heat. Sauté chopped shallots and minced garlic until softened.

Add curry powder, turmeric powder, and chili paste. Stir and cook for 1-2 minutes until fragrant.

Stir in the tempoyak and bruised lemongrass. Cook for another 2 minutes.

Pour in the coconut milk and water. Bring to a simmer, stirring constantly.

Add the catfish chunks. Simmer gently for 15-20 minutes, or until the fish is cooked through.

Season with salt to taste. Remove lemongrass stalk before serving.
