- Fermented Bean Curd (Taucu)2 tbsp
- Soy Sauce2 tbsp
- Sesame Oil1 tbsp
- Sugar1 tsp
- Water1/4 cup
- Cilantro1/2 bunch
- Saltto taste
- Black Pepperto taste

Clean and score the sea bass. Season with salt and pepper.

Steam the fish on a heatproof plate for 12-15 minutes until cooked.

While fish steams, prepare the sauce: Mince garlic, ginger, and chilies. Mash the fermented bean curd.

In a saucepan, heat a little oil. Sauté minced garlic, ginger, and chilies until fragrant.

Add the mashed fermented bean curd, soy sauce, sesame oil, sugar, and water. Stir well and simmer for 5 minutes.

Squeeze the juice of 2 limes into the sauce. Stir and taste, adjust seasoning if needed.

Once fish is cooked, remove from steamer. Discard excess liquid.

Pour the taucu-lime sauce over the hot fish.
