    Marinate chicken thighs with salt, pepper, and a paste made from blended lemongrass, galangal, turmeric powder, coriander seeds, garlic, and shallots. Let it marinate for at least 30 minutes.

    Prepare the batter by mixing rice flour, cornstarch, salt, and water to a thick consistency.

    Heat a generous amount of vegetable oil in a wok or deep fryer.

    Dip each marinated chicken thigh into the batter, ensuring it's fully coated.

    Fry the chicken until golden brown and crispy. Drain on paper towels.

    For the sambal: Sauté red chilies, tomatoes, garlic, and shallots until softened. Add shrimp paste, sugar, and salt. Blend or pound into a coarse paste. Stir in lime juice.

    To serve, place a piece of fried chicken on a plate. Smash it gently with a mortar or pestle, but not completely pulverized.

    Spoon a generous amount of sambal over the smashed chicken.
