Bahan
- Ground beef500g
- Tapioca starch100g
- Egg white1
- Garlic, minced4 cloves
- Shallots, minced2
- Salt1.5 tsp
- White pepper1 tsp
- Ice water100ml
- Beef broth2 liters
- Bok choy1 bunch
- Fried tofu200g
- Rice noodles200g
- Scallions, chopped2 tbsp
- Fried shallots2 tbsp

Combine ground beef, tapioca starch, egg white, minced garlic, minced shallots, salt, and white pepper in a bowl. Mix well.

Gradually add ice water while mixing until the mixture is smooth and sticky.

Bring a pot of water to a boil. Form small meatballs by hand and drop them into the boiling water. Cook until they float and are cooked through. Remove and set aside.

In a separate pot, bring beef broth to a simmer. Add the cooked meatballs, fried tofu, and blanched bok choy.

Prepare rice noodles according to package instructions. Divide noodles among serving bowls.
