Prepare noodles: Separate fresh kuey teow or soak dried ones until pliable, then drain.

Prepare aromatics and protein: Mince garlic. Slice spring onions, separating white and green parts. Lightly beat eggs.

Make the sauce: Combine dark soy sauce, light soy sauce, sugar, and water in a small bowl.

Stir-fry: Heat oil in a wok over high heat. Add minced garlic and white parts of spring onions, stir-fry until fragrant.
