- Tuaran Mee noodles500g
- Shrimp250g
- Garlic3 cloves
- Ginger1 inch piece
- Chili Paste (Sambal Oelek or similar)1-2 tbsp
- Light Soy Sauce2 tbsp
- Oyster Sauce1 tbsp
- Vegetable Oil2 tbsp
- Saltto taste
- Black Pepperto taste
- Spring Onions2 stalks

Prepare noodles: Cook Tuaran Mee noodles according to package directions. Drain well.

Prepare shrimp: Peel and devein the shrimp. Pat dry.

Prepare aromatics: Mince garlic and ginger. Chop spring onions.

Make sauce: In a small bowl, combine chili paste, light soy sauce, oyster sauce, salt, and black pepper.

Stir-fry shrimp: Heat 1 tbsp of vegetable oil in a wok over medium-high heat. Add shrimp and stir-fry until pink and cooked through. Remove shrimp and set aside.

Stir-fry aromatics and sauce: Add the remaining 1 tbsp of vegetable oil to the wok. Add minced garlic and ginger and stir-fry until fragrant. Add the prepared sauce and stir for 30 seconds.

Combine: Add the cooked noodles and cooked shrimp to the wok. Toss well to coat everything in the sauce. Stir-fry for 2-3 minutes until heated through.
