    Cut beef into bite-sized cubes (approx. 2-3 cm).

    Soak bamboo skewers in water for at least 30 minutes to prevent burning.

    Prepare the marinade: Blend shallots, garlic, galangal, turmeric powder, coriander seeds, and cumin seeds into a paste. If using whole spices, toast them lightly before grinding.

    In a bowl, combine the beef cubes with the spice paste, 100ml coconut milk, tamarind paste, palm sugar, and salt. Mix well and marinate for at least 2 hours, or preferably overnight in the refrigerator.

    Thread the marinated beef cubes onto the soaked bamboo skewers, ensuring not to pack them too tightly.

    Prepare the peanut sauce: Sauté the remaining shallots and garlic in vegetable oil until fragrant. Add peanut butter, remaining 100ml coconut milk, kaffir lime leaves, bruised lemongrass stalk, palm sugar, and salt. Simmer gently, stirring constantly, until the sauce thickens. Add water as needed to reach desired consistency. Remove lemongrass and kaffir lime leaves before serving.

    Grill the satay skewers over medium-high heat (charcoal grill is ideal) for 8-10 minutes, turning occasionally, until cooked through and slightly charred.

    Serve the grilled satay immediately with the warm peanut sauce, and optional garnishes like chopped shallots, cucumber slices, or chili.
