- Shallots, thinly sliced3
- Garlic, minced3 cloves
- Bird's eye chilies, finely chopped2-3
- Kecap manis (sweet soy sauce)4 tbsp
- Soy sauce1 tbsp
- Shrimp paste (terasi), toasted1 tsp
- Vegetable oil3 tbsp
- Saltto taste
- Black pepperto taste
- Cucumber, sliced1/2
- Tomato, wedged1
- Fried shallots, for garnish2 tbsp

Prepare the omelets: Whisk 2 eggs with a pinch of salt and pepper. Heat 1 tbsp oil in a non-stick pan over medium heat. Pour in half the egg mixture and swirl to create a thin omelet. Cook until set, then carefully slide onto a plate. Repeat with the remaining eggs.

Prepare the fried rice base: In a wok or large skillet, heat 2 tbsp oil over medium-high heat. Add sliced shallots and sauté until fragrant. Add minced garlic and chopped chilies, stir-fry for 30 seconds.

Add diced chicken and shrimp to the wok. Stir-fry until the chicken is cooked through and the shrimp turn pink.

Add the cooled cooked rice to the wok. Break up any clumps. Stir-fry until the rice is heated through.

In a small bowl, mix kecap manis, soy sauce, and toasted shrimp paste. Pour this mixture over the rice. Season with salt and pepper to taste. Stir-fry vigorously until everything is well combined and the rice is slightly dry.

To serve, place a portion of the fried rice onto the center of each prepared omelet. Carefully fold the omelet around the rice to enclose it, creating a parcel. Serve immediately with cucumber and tomato slices, and a sprinkle of fried shallots.
