- Beef stew meat, cut into 1.5-inch cubes1 kg
- Thick coconut milk400 ml
- Rendang paste (store-bought)4 tbsp
- Lemongrass, bruised1 stalk
- Kaffir lime leaves3 leaves
- Saltto taste
- Water200 ml
- Vegetable oil2 tbsp

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides.

Add the rendang paste and sauté for 2-3 minutes until fragrant.

Pour in the thick coconut milk and water. Add the bruised lemongrass stalk and kaffir lime leaves. Stir well to combine.

Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 1 to 1.5 hours, or until the beef is tender and the sauce has thickened to a rich, gravy-like consistency.

Remove the lemongrass and kaffir lime leaves. Season with salt to taste.
