Prepare the spice paste: Blend lemongrass, galangal, turmeric, shallots, garlic, dried chilies, and candlenuts until smooth. Add coriander powder, cumin powder, and shrimp paste.

In a pot, heat a little oil and sauté the spice paste with star anise and cinnamon stick until fragrant.

Add chicken thighs, tamarind paste, coconut milk, palm sugar, and salt. Stir well and simmer over low heat until the chicken is cooked and the sauce thickens, about 20-25 minutes. Ensure the chicken is well coated.

Grill or broil the chicken pieces, basting with the thickened sauce, until nicely charred and caramelized.
