    Finely chop the onion, tomatoes, and green chilies. Sauté mustard seeds and curry leaves in oil until fragrant.

    Add chopped onions and sauté until golden brown. Add ginger-garlic paste and green chilies, cook for a minute.

    Add chopped tomatoes and cook until softened. Stir in turmeric powder, coriander powder, and cumin powder. Cook for 2-3 minutes.

    Pour in coconut milk and bring to a gentle simmer. Add salt to taste. Let it simmer for 5-7 minutes until the gravy thickens slightly.
