
Classic Baked Feta Pasta

A simple yet incredibly flavorful dish where cherry tomatoes and a block of feta cheese are baked together until the tomatoes burst and the feta becomes creamy, then tossed with pasta.

- Cherry tomatoes500g
- Garlic cloves4
- Olive oil1/4 cup
- Dried oregano1 tsp
- Red pepper flakes1/4 tsp
- Pasta (e.g., penne, fusilli)300g
- Fresh basila handful
- Saltto taste
- Black pepperto taste

Preheat oven to 200°C (400°F).

Place feta cheese in the center of a baking dish. Arrange cherry tomatoes around the feta.

Add peeled garlic cloves to the dish. Drizzle everything generously with olive oil. Sprinkle with oregano, red pepper flakes, salt, and pepper.

Bake for 25-30 minutes, or until the tomatoes have burst and the feta is soft and slightly browned.

While the feta and tomatoes are baking, cook pasta according to package directions. Drain, reserving some pasta water.

Remove the baking dish from the oven. Mash the feta and tomatoes with a fork to create a creamy sauce.

Add the cooked pasta to the baking dish and toss well to coat with the sauce. Add a splash of reserved pasta water if needed to reach desired consistency.

Stir in fresh basil leaves. Serve immediately.
