- Dried Italian seasoning1 tsp
- Vegetable broth or water3 cups
- Pasta (e.g., rotini, farfalle)300g
- Fresh parsley2 tbsp, chopped

In a large oven-safe skillet or pot, combine feta cheese, cherry tomatoes, minced garlic, olive oil, Italian seasoning, salt, and pepper.

Add the uncooked pasta and pour the vegetable broth (or water) over everything. Stir gently to combine.

Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 15-20 minutes, stirring occasionally, until pasta is al dente and most of the liquid is absorbed.

Remove from heat. Stir well, breaking up the feta and mashing the tomatoes to create a sauce. If too thick, add a little more broth or water.
