- Passion fruit pulp (seeds strained if preferred)3 tbsp

- Black pepper1/4 tsp

Prepare the sa tế base: Sauté minced lemongrass, garlic, and shallots in oil until fragrant. Add blended dried chilies and chili flakes. Cook until aromatic. Strain if desired.

Make the marinade: In a bowl, combine 3 tbsp of the sa tế oil with fish sauce, sugar, passion fruit pulp, lime juice, salt, and black pepper. Mix well.

Marinate the squid: Add the squid pieces to the marinade, ensuring they are fully coated. Marinate for at least 20 minutes.

Grill the squid: Preheat grill to medium-high. Grill the marinated squid for 3-4 minutes per side, until cooked and slightly charred. Avoid overcooking.
