- Dried flat rice noodles (Banh Pho)1 lb
- Fish sauce4 tbsp
- Lime juice2 tbsp
- Sugar1 tbsp
- Garlic2 cloves, minced
- Chili garlic sauce (optional)1 tsp
- Sesame oil1 tsp
- Fresh cilantro1 bunch, chopped
- Fresh mint1/2 bunch, chopped
- Green onions1/2 bunch, sliced
- Carrot1 medium, julienned
- Cucumber1/2, julienned
- Bean sprouts1 cup
- Roasted peanuts, crushed1/4 cup
- Fried shallots2 tbsp
- Saltto taste
- Black pepperto taste

Poach chicken breasts in lightly salted water until cooked through. Let cool, then shred.

Cook rice noodles according to package directions. Drain, rinse with cold water, and drain well.

In a small bowl, whisk together fish sauce, lime juice, sugar, minced garlic, chili garlic sauce (if using), and sesame oil to make the dressing. Season with salt and pepper.

In a large bowl, combine the cooked and drained rice noodles, shredded chicken, chopped cilantro, chopped mint, sliced green onions, julienned carrot, julienned cucumber, and bean sprouts.
