- Beef broth (low sodium)8 cups
- Ginger, thinly sliced2-inch piece
- Garlic, smashed3 cloves

- Fish sauce2 tbsp
- Rock sugar or sugar1 tsp

- Black pepperto taste
- Rice noodles (bánh phở)1 lb
- Fresh cilantro, chopped0.5 bunch
- Green onions, chopped0.5 bunch

In a pot, combine beef broth, sliced ginger, smashed garlic, star anise, and cinnamon stick. Bring to a simmer.

Simmer for at least 30 minutes to infuse flavors. Strain the broth, discarding solids.

Return the strained broth to the pot. Stir in fish sauce and rock sugar. Season with salt and black pepper to taste.

Thinly slice the raw beef sirloin against the grain.

Cook rice noodles according to package directions. Drain and rinse.

To serve, place noodles in bowls. Top with pre-cooked brisket slices and raw beef slices. Ladle the hot broth over the beef and noodles.
