- Pork bone broth (store-bought or homemade)2 liters
- Pre-made pork meatballs300 g
- Dried wood ear mushrooms15 g
- Fish sauce2 tbsp
- Garlic2 cloves
- Scallions2 stalks
- Rice vermicelli noodles (bún)400 g
- Saltto taste
- Black pepperto taste
- Wateras needed
- Chili peppers (for garnish)1
- Cilantro (for garnish)a few sprigs

Soak dried wood ear mushrooms in warm water until softened. Drain, trim tough parts, and thinly slice.

Mince garlic and chop scallions (white and green parts separated).

Heat the pork bone broth in a pot. Add minced garlic and sliced mushrooms. Bring to a simmer.

Add the pre-made pork meatballs to the simmering broth. Cook for about 5-10 minutes, or until heated through and cooked.

Stir in 2 tbsp fish sauce and season with salt and pepper to taste. Add chopped scallion whites.

Cook rice vermicelli noodles according to package directions. Drain and rinse.

To serve, divide the noodles among bowls. Ladle the hot broth, meatballs, and mushrooms over the noodles. Garnish with chopped scallion greens, cilantro, and sliced chili peppers.
