- Rice vermicelli noodles (bún)400g
- Canned diced tomatoes1 can (400g)
- Chicken or vegetable broth1.5 liters
- Lemongrass (optional, pre-cut)1 stalk
- Scallions1/2 bunch
- Cilantro1/2 bunch
- Lime1
- Chili garlic sauce or Sriracha1-2 tbsp
- Garlic powder1 tsp
- Fish sauce2 tbsp
- Vegetable oil1 tbsp
- Saltto taste
- Black pepperto taste

Prepare the noodles: Cook rice vermicelli noodles according to package directions. Drain and rinse.

Make the quick broth: Heat vegetable oil in a pot. Add minced garlic (if using fresh) and cook briefly. Add canned diced tomatoes and their juice, chicken/vegetable broth, fish sauce, garlic powder, and optional lemongrass. Bring to a simmer.

Add snails and flavor: Stir in the pre-cooked snails and chili garlic sauce/Sriracha. Simmer for 10-15 minutes to allow flavors to combine. Adjust seasoning with salt and pepper.

Prepare garnishes: Chop scallions and cilantro. Cut lime into wedges.

Assemble: Divide noodles among bowls. Ladle the hot broth with snails and tomatoes over the noodles. Garnish with scallions and cilantro.
