- Ground pork300g
- Jasmine rice1 cup
- Water8 cups
- Fish sauce1 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Scallions1 stalk
- Chili oil1 tsp (optional)

Rinse the rice thoroughly. In a large pot, combine rice and 8 cups of water.

Bring to a boil, then reduce heat to low and simmer, stirring occasionally, for about 30 minutes until the rice starts to break down.

Add the ground pork to the pot. Stir well to break up any clumps and cook until the pork is fully cooked through, about 10-15 minutes.

Season the congee with fish sauce, salt, and black pepper to taste. Stir well.

Continue to simmer for another 5 minutes until the congee reaches desired consistency.

Serve hot, garnished with chopped scallions and a drizzle of chili oil if desired.
