- Cooked rice (leftover or instant)2 cups
- Water or chicken broth5 cups
- Pre-cooked or canned clams, drained1 cup
- Garlic, minced2 cloves
- Fish sauce1 tbsp
- Saltto taste
- Black pepperto taste
- Scallions, chopped2 tbsp
- Cilantro, chopped2 tbsp

In a pot, combine cooked rice and water/broth. Bring to a simmer and cook, stirring frequently, until the rice breaks down into a porridge consistency (about 15-20 minutes). Mash some rice grains against the side of the pot to help thicken.

While the congee cooks, briefly sauté minced garlic in a pan until fragrant.

Add the pre-cooked or canned clams to the pan with the garlic and heat through for 1-2 minutes.

Stir the clams and garlic mixture into the congee. Add fish sauce and cook for another 5 minutes.

Season with salt and black pepper to taste.

Serve hot, garnished with scallions and cilantro.
