- Sugar1/2 cup (divided)
- Salt1/2 teaspoon

Prepare the candied coconut flakes: In a dry skillet, toast the shredded coconut over medium-low heat until lightly golden. Add 1/4 cup of sugar and stir continuously until the sugar melts and coats the coconut, creating candied flakes. Remove from heat and set aside.

Rinse and soak the glutinous rice as per the traditional Xôi Gấc recipe (4+ hours or overnight). Drain well.

Mix the drained rice with gac fruit pulp. Let it sit for 15-20 minutes.

Steam the rice for 30-40 minutes until cooked.

Gently heat the coconut milk, remaining 1/4 cup sugar, and salt until sugar dissolves.

Combine the steamed rice with the coconut milk mixture and vegetable oil. Mix gently and let it rest for 10-15 minutes.
