- Creamy durian paste500g
- Salted egg yolks4
- All-purpose flour180g
- Red velvet powder20g
- Golden syrup140ml
- Lye water (Kansui)1 tsp
- Vegetable oil45ml
- Egg yolk (for wash)1
- Water1 tbsp
- Salt1/4 tsp

Prepare the filling: Divide durian paste into 8 portions. Press one salted egg yolk into the center of each and form into a ball.

Make the dough: Sift together flour, red velvet powder, and salt. Whisk in golden syrup, lye water, and vegetable oil until a soft dough forms. Let it rest for 30 minutes.

Assemble the mooncakes: Divide dough into 8 portions. Flatten each, place a filling ball in the center, and wrap dough around it. Shape into a ball.

Mold the mooncakes: Lightly flour the mooncake mold. Press the dough-covered filling into the mold and release. Repeat for all.

First bake: Preheat oven to 180°C (350°F). Bake for 10 minutes. Let cool completely.

Egg wash: Mix egg yolk with 1 tbsp water. Lightly brush the cooled mooncakes.

Second bake: Bake for 10-12 minutes, or until the crust is set and slightly firm. Cool completely.
