- Full-fat coconut milk200ml
- Cooked shredded chicken200g
- Ginger1 small piece (2cm)
- Star anise1 pod
- Fish sauce2 tbsp
- Saltto taste
- Black pepperto taste
- Fresh cilantrosmall bunch

Infuse broth: In a pot, combine chicken broth, coconut milk, bruised ginger piece, and star anise. Bring to a gentle simmer for 10 minutes. Remove ginger and star anise.

Season broth: Stir in fish sauce, salt, and black pepper to taste. Keep warm.

Prepare noodles: Cook dried cassava noodles according to package instructions. Drain and rinse.

Assemble: Divide noodles into bowls. Top with cooked shredded chicken. Ladle the hot broth over. Garnish with chopped cilantro and serve with a lime wedge.
