- Fish sauce1.5 tbsp
- Sugar1 tsp
- Black pepper1 tsp
- Salt1.5 tsp
- Cornstarch3 tbsp
- Vegetable oil, for frying1 cup
- Lime zest1 tsp
- Lime juice1 tbsp
- Fresh cilantro, for garnisha few sprigs

Cut chicken thighs into bite-sized pieces. Marinate with minced lemongrass, garlic, fish sauce, sugar, black pepper, and 1 tsp salt for 30 minutes.

Toss marinated chicken with cornstarch until evenly coated.

Heat vegetable oil in a wok or deep pan over medium-high heat. Fry chicken pieces in batches until golden brown and crispy. Drain on paper towels.

In a clean wok, add 1 tbsp of oil. Add the remaining 0.5 tsp salt, lime zest, and lime juice. Toast briefly until fragrant.
