- Chicken thighs, bone-in, skin-on1 kg
- Fresh ginger, peeled and thinly sliced50g
- Garlic, minced3 cloves
- Shallots, minced2
- Fish sauce4 tbsp
- Soy sauce2 tbsp
- Sugar2 tbsp
- Black pepper1 tsp
- Water1/2 cup
- Vegetable oil2 tbsp
- Fresh cilantro, chopped (for garnish)2 tbsp
- Red chilies, sliced (for garnish, optional)1

Cut chicken thighs into bite-sized pieces. Marinate chicken with 1 tbsp fish sauce, 1 tbsp soy sauce, 1 tsp sugar, and 1/2 tsp black pepper for at least 15 minutes.

Heat vegetable oil in a pot or Dutch oven over medium-high heat. Add minced garlic and shallots and sauté until fragrant.

Add the marinated chicken to the pot and sear on all sides until lightly browned.

Add the sliced ginger, remaining fish sauce, remaining soy sauce, remaining sugar, and water. Stir to combine.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, or until the chicken is cooked through and tender, and the sauce has thickened.

Stir occasionally to prevent sticking. If the sauce is too thin, uncover and simmer for a few more minutes to reduce.

Season with salt and remaining black pepper to taste.
