Finely mince lemongrass, garlic, shallots, and chilies. In a bowl, combine minced aromatics with shrimp paste, fish sauce, sugar, salt, black pepper, and sesame oil.

Clean and pat dry chicken wings. Add chicken wings to the marinade and toss to coat thoroughly. Marinate for at least 1 hour, or up to 4 hours in the refrigerator.

Preheat oven to 200°C (400°F) or prepare a grill.

Arrange chicken wings on a baking sheet lined with parchment paper or directly on the grill grates.

Bake for 30-40 minutes, flipping halfway through, until golden brown and cooked through. If grilling, cook for about 20-25 minutes, turning regularly.
