- Fish sauce4 tbsp
- Sugar2 tbsp
- Garlic, thinly sliced and fried until golden1 whole head
- Black pepper1 tsp
- Salt1 tsp
- Cornstarch1/2 cup
- Vegetable oil, for fryingAs needed
- Green onions, chopped, for garnish2 tbsp

Season chicken pieces with salt and black pepper.

Coat chicken evenly with cornstarch.

Heat oil in a wok or deep pan to 175°C (350°F). Fry chicken in batches until golden brown and cooked through. Drain.

While chicken fries, prepare the sauce: In a clean pan, combine fish sauce, sugar, and about half of the fried garlic. Simmer for 2 minutes until slightly thickened.

Add the fried chicken to the sauce and toss to coat. Stir in the remaining fried garlic.
