- Tamarind paste80g
- Garlic5 cloves
- Shallots1 cup, thinly sliced
- Bird's eye chilies2-3, finely chopped
- Fish sauce3 tbsp
- Brown sugar2 tbsp
- Vegetable oilfor frying
- Cornstarch3 tbsp
- Saltto taste
- Black pepperto taste
- Water40 ml

Marinate chicken wings with salt and pepper.

Heat vegetable oil in a wok or deep fryer to 170°C (340°F).

Toss marinated wings in cornstarch until lightly coated.

Fry chicken wings until golden brown and cooked through. Drain and set aside.

In a separate pan, fry the thinly sliced shallots in oil until golden brown and crispy. Drain on paper towels and set aside.

Prepare the sauce: Mince garlic. Finely chop chilies.

In a clean pan, sauté minced garlic until fragrant.

Add tamarind paste, fish sauce, brown sugar, chopped chilies, and water. Stir well and simmer until the sauce thickens.
