- Duck1 kg, cut into pieces
- Star fruit (Sấu)3 pieces, peeled and pitted
- Fermented tofu (Mẻ)2 tablespoons, mashed
- Shallots2, minced
- Garlic3 cloves, minced
- Fish sauce3 tablespoons
- Sugar1 teaspoon
- Water400 ml
- Saltto taste
- Black pepperto taste
- Fresh mint leavesfor garnish
- Chili flakesfor garnish

Marinate duck pieces with salt, black pepper, minced shallots, garlic, fish sauce, sugar, and mashed fermented tofu for at least 30 minutes.

Heat a pot or Dutch oven over medium-high heat. Sear the marinated duck pieces until well-browned.

Add the peeled and pitted star fruit (sấu). Stir gently.

Pour in water. Bring to a boil, then reduce heat to low, cover, and simmer for 60-70 minutes, or until the duck is very tender.

Taste and adjust seasoning with salt, fish sauce, or a pinch more sugar if needed.
