- snakehead fish fillets400g
- pre-made tapioca noodles500g
- shallots2 cloves
- garlic2 cloves
- fish sauce2 tbsp
- chicken bouillon powder1 tsp
- turmeric powder1/2 tsp
- scallions2 stalks
- cilantro1/2 bunch
- lime1
- vegetable oil2 tbsp
- saltto taste
- black pepperto taste
- water1.2 liters

Prepare the fish: Cut snakehead fish into bite-sized pieces. Season with salt, pepper, and a little fish sauce. Pan-sear in a lightly oiled pan until golden brown on both sides. Set aside.

Prepare the broth: Sauté minced shallots and garlic until fragrant in a pot. Add water, fish sauce, chicken bouillon powder, and turmeric powder. Bring to a boil, then simmer for 10 minutes.

Cook the noodles: Add the pre-made tapioca noodles to the boiling broth. Cook according to package directions, usually until tender and slightly chewy.

Assemble and serve: Divide the cooked noodles among bowls. Top with the seared fish pieces. Ladle the hot broth over the noodles and fish. Garnish with chopped scallions and cilantro. Serve with lime wedges on the side.
