- Crab paste (chả cua)100g
- Assorted seafood shells (shrimp heads/shells, crab shells)500g
- White fish bones300g
- Onion1
- Leek1/2
- Scallions1 bunch
- Cilantro1/2 bunch
- Dillsmall bunch
- Fish sauce4 tbsp
- Salt1 tsp
- White pepper1/2 tsp
- Chili paste or fresh chilito taste
- Lime1

Prepare the seafood broth: Sauté seafood shells, fish bones, onion, and leek until fragrant. Add water and simmer for 1.5-2 hours. Strain for a rich broth.

Season the broth with fish sauce, salt, and white pepper. Keep warm.

Prepare the seafood pastes: Mix each paste (shrimp, squid, crab) with finely chopped scallions and a pinch of salt. Form into small balls.

Cook the noodles: Blanch fresh rice vermicelli noodles until tender. Drain and divide into serving bowls.

Assemble the bowls: Place the seafood paste balls into each bowl. Ladle the hot seafood broth over them.

Garnish with fresh cilantro, dill, and optionally a few whole cooked shrimp. Serve with chili paste and lime wedges.
