- Glass noodles (dried, soaked and chopped)1/4 cup
- Shallots (minced)2 tbsp
- Garlic (minced)1 tbsp
- Fish sauce3 tbsp
- Soy sauce2 tbsp
- Honey1 tbsp
- Black pepper1 tsp
- Vegetable oil2 tbsp
- Jasmine rice2 cups
- Water3 cups
- Cucumber (sliced, for garnish)1/2

Marinate pork chops: Prepare marinade with minced lemongrass (optional, if available), garlic, shallots, fish sauce, soy sauce, honey, vegetable oil, sugar, and black pepper. Marinate pork chops for at least 30 minutes.

Prepare Chả Trứng: In a bowl, mix ground pork, 2 eggs, minced wood ear mushrooms, chopped glass noodles, minced shallots, minced garlic, 1 tbsp fish sauce, 1 tbsp soy sauce, and black pepper. Mix well.

Cook Chả Trứng: Line a small loaf pan or heatproof dish with parchment paper. Press the meat mixture evenly into the pan. Steam for 20-25 minutes, or until cooked through. Let cool slightly, then slice.

Cook rice: Rinse jasmine rice and cook using a rice cooker or stovetop method.

Grill pork chops: Preheat grill to medium-high heat. Grill marinated pork chops for 5-7 minutes per side until cooked through and charred.

Assemble the dish: Serve steamed rice on a plate. Add a grilled pork chop and a slice of Chả Trứng. Garnish with fresh cucumber slices and serve with nuoc cham.
