- Soft-shell crabs4-6 medium
- All-purpose flour1/2 cup
- Cornstarch1/4 cup
- Egg1
- Bell peppers (various colors)1 cup, sliced
- Bean sprouts1 cup
- Scallions3 stalks
- Garlic3 cloves
- Ginger1 inch piece
- Fish sauce3 tbsp
- Oyster sauce1 tbsp
- Soy sauce1 tbsp
- Sesame oil1 tsp
- Vegetable oilfor frying and stir-frying

Soak glass noodles in warm water for 10-15 minutes until softened. Drain and cut into shorter lengths.

Prepare the soft-shell crabs: clean them thoroughly, remove the spongy gills and apron. Pat dry.

In a shallow bowl, whisk the egg with a splash of water. In another bowl, combine flour and cornstarch. Season with salt and pepper.

Dredge each soft-shell crab in the flour mixture, then dip in the egg wash, and dredge again in the flour mixture, ensuring it's fully coated. Shake off excess.

Heat about 1-2 inches of vegetable oil in a deep pan or wok to 350°F (175°C). Carefully fry the coated soft-shell crabs in batches until golden brown and crispy (about 3-4 minutes per side). Drain on paper towels.

Prepare vegetables: slice bell peppers, chop scallions (separate white and green parts), mince garlic and ginger.

In a small bowl, whisk together fish sauce, oyster sauce, soy sauce, sesame oil, and 1/4 cup water. Set aside.

In a clean wok or large skillet, heat 2 tbsp vegetable oil over medium-high heat. Add minced garlic and ginger, sauté until fragrant.

Add the white parts of the scallions and sliced bell peppers. Stir-fry for 2-3 minutes until peppers are tender-crisp.

Add the drained glass noodles and stir-fry for 1-2 minutes.

Add the bean sprouts and stir-fry for 1 minute.

Pour the sauce mixture over the noodles and vegetables. Toss well until noodles are coated and heated through. Season with salt and pepper to taste.

Gently fold in the green parts of the scallions.

Serve the stir-fried noodles immediately, topped with the crispy fried soft-shell crabs. Garnish with cilantro.
